Oil Change

Stupid question, but I just changed my oil. I put 6 qts in, forgetting that there's a 5.5 qt requirement. Would I be best to drain excess oil out of the engine, or am I safe to drive with the full 6qts in the car?

Probably not, 6qts should be still okay, as long as it's not overflowing, check your engine oil metering stick.

No overflow, was mildly concerned but no drivability issues so I guess I can assume its safe.

I would not exceed the limit. Too much oil can cause foaming effect and that is pretty bad for the motor.

If you're only over a bit (I think the spec is 5.8 with a filter change), and it bothers you at all, just grab another filter and change it. That should be roughly the right amount of oil to remove. Re-start the car, shut it off, and wait for a few minutes to check the oil (these engines seem to take a bit of time to drain back into the pan). You'll probably find that it is just a hair under the "full". Perfect.

Easiest solution. Draining half a quart is tediously difficult compared to switching a filter, especially on a Subaru.

It is extremely important to run the oil level no higher than maximum on the dipstick.

Once the crank starts hitting the oil surface you will have problems.
