So I found a connector on the passenger side up under the glove box that's not plugged in. It looks like it was done purposely it's a brand new car only have had it for 2 weeks. Anyone know what its for?

There are several unused plugs throughout the car. They are for options that not all the cars have. When they go down the line each car is made to it's VIN specifications One could be an FRS the next a BRZ and the the next a European GT. They are not made in batches of the same thing. Since it is actually cheaper to use as many common parts as possible this results in wiring harnesses that have unused fittings.

Are there any pre-existing unused wiring harnesses that can be utilized? Case in point, it'd be cool to have lit doors without having to tap into the wiring for the courtesy light. Speaking of Plug N' Play, is connector behind the radio the same on the FR-S and BRZ? I ask because this is the power source for the BRZ's optional footwell lighting (notice the pattern: I HATE splicing).

I am sure that some time spent with a wiring diagram a use could be found for some. The big issue would be that you could have the middle of the circuit but nothing on either end. For instance I bet we all have the wires in place for the fog lights but of course there is no switch or lights hooked up to it.
I have the whole wiring diagrams on PDFs at home and will post them up when back there on Tuesday.

There's an extra 6 pin connector behind the head unit, I and quite a few others used it to hard wire a dashcam.

There are a number of empty circuits in the fuse box under the driver's side dash, some switched, some always hot. You can wire directly into them if you're really handy with electrical, but it's really easy just to tap right in through the fuse slots using add-a-circuits.
