Does the car need to be level when flushing brake fluid?
This is my first time flushing brake fluid, and I only have 2 jack stands. Can I do the rear first, then the front? Or is it recommended that the car be level to the ground.

It is a pressurized system not gravity so it does not have to be level at all.

Bleed nipple needs to be the high point.

you'll be fine with your 2 jack stands. Do the farthest away from the Master Cylinder first which would be the passenger rear, then Driver rear, Passenger front, driver front

On my BRZ I bleed brakes when I switch from winters to summers and viceversa. I typically do one side at a time, so the car is angled on one side. No issues bleeding ever. Actually the brake fluid is the cleanest of all of my cars regardless of age.
