With a stock suspension setup, you will either poke out or rub against the strut on the inside depending on the offset. Not an ideal fitment either way.
+ 40 offset both front and rear!
Will 255 fit with this set up

Perfect fit is subjective. The fitment is OK.

Any words of wisdom on this set-up?

No sweat, glad to help out.

Not new to cars and wheels, but fitment is always tricky on various cars.
I learned alot going through this process with the FR-S, so just paying it forward.

+47 on that width of wheel would put it very close to the stock strut (if not against it), but if you are moving to coilovers you will have additional clearance inboard but you may rub the sway bar on tight turns. I.e. coilovers first, then wheels. Or find a set of these wheels to test fit first.

Maybe others can chime in better in terms of inside clearance, but I see no issues with poke with this setup, should be less than flush on the front.
I think on the rears you will be fine even without coilovers.

Would I be better off finding a +38 offset?

YES! This will give you a flush fitment and not give you the inner clearance issues.

I always considered flush to be a perfect fitment.

I'm currently running 18x8.75 +33 all round. Some would consider this an 'OK' fitment, however there is too much poke up front.

This time, the goal is 'perfect flushness', not just an OK fitment.

What about OZ 18x9's with an offset of 51 on stock suspension? I'm guessing I would have to use a 10 mm spacer? Is this safe? These would be mainly for autocross and some trackdays. Tried searching but couldn't find much information.

Check the diameter and revs/mile for the tire brand you are looking at versus the OEM at 24.7" and 844. Anything above 825 revs will get you pretty damn close to OEM size. Tirerack is a good resource for this info.

My Conti 245/35s (revs/mile 838) are less than half a km per hr difference at 100km/h, so virtually no difference at all.

thats a good tire correct? it will be going on a 18x8.5 +35

or would this be better?

The 225/40 will be closer to stock gearing. Good size tire for that rim and a really good price for RE-11s'. Sticky....
