so what would the point of a 3" exhaust be if the headers are always going to be 2.5" max? i guess the cat might flow a little better?

Exhaust loses heat and velocity over distance. You'll get turbulence and lose exhaust scavenging if the exhaust is just a huge open pipe. Opening it where it starts losing velocity is not a bad idea though.

PLM makes a 3" exit header. It was a copy if the nameless header. It's like $500 for iirc. But its EL. You could probably get a UEL of choice and have a shop fab up a 3" merge collector/exit for a full 3" system.
