they should have bottles of Subaru 0w20 on the shelf and it says idemitsu so not sure where they'd come up with valvoline. If you're paying $77 they should be using the actual Subie oil, the correct oil filter and a new crush washer, double check before giving them your car.

Probably personal preference. After the 1k mile break in a lot of people change their oil. I won't speak for him, but I'm going to guess its a combination of that, his autocross run, and ultimately time.
FWIW, I'm at about 3400 miles and haven't change the oil yet. |

whiteradam - With your driving conditions, I would be getting a TBN as well to make sure that the oil is holding up for your interval. Some of this (like the silicon) could still be residual break-in wear.
