The reason is that most of the metal surfaces on the car are grounded to the negative terminal, so if you're wrenching on the positive terminal first and you slip and touch any metal, you might create a short and spot weld your wrench to the car! Just a thought I had while watching that video (thanks Sojhinn, that'll be helpful when I get my kit!) and getting a feel for the battery sizes: The 1.5 pack, with the two small batteries stacked on top of each other, is the same width(ish) as one of the normal dump batteries. Has anyone tried replacing the normal dump batteries with two more sets of the 1.5 pack? (6 little batteries total.) If not, why not?

If you wire the smaller batteries in series you will increase the voltage to either 36v or 48v (at 1/2 the amperage). Since the controller is designed for a 24v system, you will destroy the electronics in the controller in about 100ms. It's current we crave. The more amperage available, the longer we can run the the ESC motor - at voltage closer to 28vdc.
