1) This is about right, on flat ground, if you're not really gunning it. If you're going uphill or accelerating hard, you probably want to wait a bit longer. Note that the difference in engine speed between 5th and 6th is actually more than between 4th and 5th. They made 6th a little taller to increase highway MPG.

2) I think the engagement point got a bit lower after break-in, but I never noticed any difference in stiffness. Are you sure it doesn't just seem that way because it catches lower now? And how much lower are we talking about, does it grab in the middle or half an inch off the floor?

Its not too much lower, and id say the engagement point is at the middleish. But the clutch is definitely stiffer. When I first got the car the clutch was easy to press but now its harder...but not so hard that I can't press it.I actually like it better but I'm just making sure nothing is wrong with the clutch already

I wouldn't worry about it too much, just keep an eye on it. If it doesn't continue to get stiffer, it's probably just normal. If it does get worse, you may have a hydraulics problem.
