My bike is a little under 30 lbs and my single Kuat bike rack is in that same range. I went with a single bike rack as I had no need for two and didn't want to press my luck. The hitch is quite stable, but occasionally I have to tighten the hitch pin, as it loosens while driving and I don't want to lose my bike.

If I ever needed to haul a second bike, I figure I can get the extension plus another bike and be close to the hundred pounds limit.

Yeah, I am not that concerned with Slambert's tongue weight recommendation when they say it is rated for 1000lbs towing. I'd imagine the loads it is designed for when accelerating, braking, and bouncing around with a 1000lb trailer are a lot less then 2 bikes and a rack at 120ish lbs.

I took a drive from Little Rock to TN with a 32 lb bike on a 1up rack on the slambert hitch. It took quite a bit of abuse, and held up just fine.

I have a 1.25" receiver and transport 2 bikes on a hitch rack all the time. My e-bikes are not lightweights and I've never had a problem. I have at least 40k miles with bikes on the back of the car. Don't use a trunk rack, you will bend the trunk lid, it may not have happened yet but it will.
