The important part to consider is ensuring oil pressures remain good at those high temps. I'm not sure how engine parts and surrounding parts like to be at high temps like 270F for extended periods of time, but I'm getting convinced that the oil wouldn't be the weak point here.

Right, as I understand it oil breakdown is not the concern with our engines running hot. It's more so the tendency for oil pressure to drop approaching redline when combined with oils thinning out at higher temps, regardless of whether the actual integrity of the oil is compromised.

I have a '16. I was running the Toyota 0w20 stuff and was having issues going into limp mode with a slow cam response CEL at pro solos (you hot lap 4 autocross runs at a pro solo) during summer events. I switched to 5w30 and that seems to have cleared up that problem.

5W20 and now 0W20 are specified to meet EPA demands.
Your EPA could care less how long your engine lasts. Only how little fuel it burns.
When asked about these light-weight oils a few years back, a local engine re-builder said he would recommend 20W50 for anyone interested in maximum engine life. I wonder if the oil galleys of the latest engines can flow such heavy oils.
5W30 full synthetic only for my 2016 and the others in my fleet as well.

20W50 will certainly not be useful for any kind of DD. So if that is what this engine builder was trying to say then he is full of crap. That oil weight can certainly flow within our engines and has been tested on track by many. But the oil pressures will be way off when it comes to DD.

According to @humfrz you use heavy weight oil when your car starts to leak.... which is what i'm gonna be doing in future starting next oil change. *yes it has a tiny leak from the engine bottom end/valve cover.... engine out job..

Well now, that was back in the old days. Using a heavier weight oil would help an old tired engine not to burn so much oil. Maybe it did slow the leaks, but it was hard to tell on the dirt floor of the barn where we parked.

Sawdust in the transmission and differential make those a lot quieter too.
Balsa, fir or oak ... hmm.
