Well, most setups are just fine, most of the magic is in the tune. I do think some kits have gimmicky features that add unnecessary complexity like Kraftwerks and the ESC, but there are people running them without issue.

I'm in a similar(ish) situation to the OP, I want to do my own FI, but I'm not super mechanically inclined, however, I'm a couple years out from doing it myself, going to wait until the warranty is done and I've gotten a new back up car just incase. I watched a video recently of a guy doing FI on his FRS just for reference, and he took 43 man hours of labor from removing the first bolt, to finalising the tune, he knew how to wrench (But first time doing FI), and his car was out of commission for two weeks while working on it because of problems that came up, and having to get replacement parts. If you're still going to ignore people and do it, keep that in mind, Aftermarket isn't turn key, stuff rarely works right out of the box, I'd set atleast 2-3 weeks aside where your car is going to be unusable if you're going to try this yourself.

My issue is more, there is nowhere that would even do a FI installation where I live.. the closest thing is a crappy 'tuning' shop that does nothing but aftermarket wheels and stereos, they won't even do suspension swaps.. living in the boonies is horrible.

. . . but consider taking Opositeness a step further:

Prior to install, blindfold yourself, and tie your hands behind your back. Next, whittle available tools down to a child's beach shovel, a cotton swab, a straightjacket, and a used toothpick.

Perform the install with your 86 turned upside-down, inside-out, backwarded and hopscotched.

(Of course I'm drinking - what the fuck is 'hopscotched' anyway?)

Sear for two minutes each side, slap your wife . . .

and enjoy your new compound FI penis car (Corvette) beater.

Tbh, OP is asking for trouble without a full mechanic's tool set (craftsman 300 piece at least), jackstands, low profile jack, torque wrenches, maybe an impact gun in 3/4ths or 1/2 drive with adapters, and the experience of working on any cars between friends who might help.

I have a Harrop kit and full bolt-ons. I've done head gaskets, engine swaps/pulls, turbo kits, and clutch jobs on multiple types of vehicles. It still took a good 12 hours of labor with helpful friends to install the SC using only hand tools and a few cheats using an impact gun with a full set of tools including socket bits of various diameters in multiple drive sizes, torque wrenches, and specialized pliers. We did take a lot of breaks since it was a "Florida Summer" in April with +100F temps.

No project is that easy without a lift and experience. I feel like you pay mechanics for the experience that they have performing the installs in addition to expensive tools. OP will need to perform a lot of research and digging for hours over days to get all of the materials to do any install correctly at great expense of personal time (some of us like spending free time looking this crap up for fun), as well as properly planning and diagramming the parts that come off so that they return to their respective positions after the work is done. Don't get me started on the amount of consumable parts like push rivets needed for bumper removal.

Is it some guy that installs a SBD kit? If so, he has a video where he fumbles around doing a simple oil change.

It depends on the install. Edelbrock can be done with like 10 tools and some jack stands, without an impact gun. Most can, even.

Also, what are you doing to your poor bumper that you need new parts to put it back on?

I have a plastic fastener remover that gets those push in rivets off quicker than you can blink and I paid like 6 bucks for it. I've taken my bumper and that fucking undertray off like 14 times now...
