Is the jump from stock header/E85 to headers/E85 worth it? I'm sure it's not the same jump as 91 to E85 and I'm worried it'll be too loud if I go for the gains. Any advice is appreciated
Catless header will definitly make your car louder, if your currently at your loudness limit then just put your stock catback on when you get the catless header.
Their is very little power gain in a catback.

Sell your aftermarket catback to subsidise the catless header
Your car will be louder than stock with catless header and stock catback, but will be still quiet and not attract any unwanted attention from police ect.

You will get the gains you want without the noise.

adding header will further help with torque dip and power, nothing startling but about same jump as a stock car to e85 tune.

best bang for buck is Catless header , tune, e85 and dropin filter . After that dont bother with more NA mods for power its very diminished gains for lots more money and noise.

throw on some exhaut tips like below or from local muffler shop. on stock muffler.

Yes

OFT comes with tunes for
Stock car
Cars with catless EL Header
Cars with catless UEL header
All have options for petrol 91/93 and E85

The el/uel tunes should work well with all "normal" headers

if your planning on getting an ACE or Nameless header then you might need to tweak the tunes a bit or if you get a catted header.

The only advantage of the openflash header may be that the tune for UEL header was done on that header but people have used it on Tomei and RLS , gruppe-s ect with good results.

re E85 no known issues yet other than increased fuel consumption see here

I don't think their is any ideal mileage may be just complete break in period. Make sure no bugs or issues with car if any get them sorted by dealer before fitting header

Then add the header tune E85 ect.

you can always flash back to 100% stock tune with OFT whenever you like

always be prepared to swap out header if you get any engine related issue (unlikely) just to stop the dealer trying to blame header for issue, some are more accommodating of mods than others

Always use new gaskets for header install

enjoy.
