You're better off going with a catback rather than just an overpipe change. I reccomend ARK -GRiP or Corsa Performance

Nameless created the OP/DP combo to be able to change the bend of the OP and not force it to connect to the OEM location because the OEM connection between OP and DP is really hard to work around and fit a bigger pipe. Fitting a 3 in OP retaining stock header and FP is going to be really difficult/impossible.

Still the matter of the fact is, ou increase the volume of a very small pipe, but keep all the restrictions in place. Doesn't seem like it is worth it still... Not trying to be negative, but real.
Those dynos are done with the OP being the last restriction in the exhaust though. I would bet that if you did a dyno comparison between fully stock and fully stock with a 3" over pipe only it wouldn't be a significant difference at all.

While I AM all about getting any bit of power I can, where I can, I have no interest in spending over a grand, or even over $500 on a full exhaust. The most I'd ever do at this point is the Flowmaster, strictly to get the 2.5" mid-section for as little as possible.

It's the cats in the system that is the restriction. No way around it even with a 3" OP. If you put in the OP, and install your trackpipe as you said, you lose the second cat and might gain a bit. Maybe 3whp?
