One can choose & mount with insane stretch tires, and opposite also is true, with being able to mount tires way wider then manufacturers advise/suggest. Of course, with drawbacks, like mushy steering due too much side flex and such. Such "meaty" are sometimes choosed in racing class, where wheel dimensions are limited, but no limits on tire width choice, to get as much grip as possible within rules even with drawbacks for normal use/driving.
So "can" != "should".
By manufacturers for 8" by googled out tire width tables/calculators:
min 215, ideal 225 & 235, max 245.

255 would look like you have flat tires.
You want to go wider you need a wider wheel.

Every tire has a min/max wheel size listed, look up the tire you want and see what the minimum wheel width is.
