Do you mean you just don't have the right equipment, or the equipment you have can't be configured, or it's just inconvenient to use that equipment while on the road?

You can log dozens of parameters (including oil temperature) using RaceChrono + OBDLink MX+ plugged into the OBD port. With a little setup, you can even display all those parameters in real time on the car's head unit via Android Auto.

I try to use a quality parts that has a positive effect on the radiator and prevents overheating. Due to living in (very) cold climate and using my car year round (down to -30deg), I went with the dual radiator/oil cooler from Jackson racing on my gen1, and it has been performing great for 3+ years now. It may not be the best choice for a summer only dedicated track car, but for a daily it provides faster warm up in winter and cooling in summer, without any need to disconnect it for winter (basically maintenance free). For my needs, it was the best choice.
