It depends on the person but I personally just learned using the clutch/gas. You won't roll back all that much unless you're taking way too long. I feel using the e-brake is adding an extra step which may cause you to mess up even more? To each their own though.

That's pretty much the best advice you can get in my opinion. Whenever I notice that I'm on a slight incline, and that there's a car behind me, I tend to go into panic mode, and only then will I stall the car (did this picking up my friend a couple of days ago).

If I don't think about it, it's like there's not even a hill there.

It's hard to explain, it's like I feel urged to give it more throttle and dump the clutch, whereas I wouldn't have that issue when I'm not thinking about it. Purely psychological issue for myself.

Generally speaking you should always use the E-brake on an incline for safety. It should not take long to learn to control the car from rolling back at all when done correctly.

WTF?? If my car has hill assist, rev matching and whatever else makes it like it drive by itself, I am tossing it out. defeat the purpose of owning a manual car....oh, the horror.

make use of your hand brake. when youre confident enough youll learn how without even lifting the handbrake.

Someone suggested this already, but I have to agree and REITERATE.
If you are on a hill and do not have the ability/are not comfortable with catching the wheels quickly, USE the e-brake.

While sitting on an incline > Pull up/enable the e-brake, then start off in first gently and you will feel the wheels catch, then release the e-brake and go go go. You should not be revving high at all though. Good luck and you will be fine as long as you have starting in first gear down consistently.
