Mech from my dealership stated top it up with clean water and it should be okay...

I did so but i didn't top it up i only filled it to half way.

I will be watching it alot closer now to see if it goes below the cold line i set.

The water should be fine for years and years but you really should use the proper fluid. Modern cooling systems are very sensitive to chemistry and topping it up with water (especially non deionized water) is a temporary stop gap. I encourage you to make a phone call to another dealer for a second opinion. Am if im wrong let me know. just trying to help.
