I had exactly the same experience yesterday -- repeated incidents of ice mode during a single run (probably four or five during on a 50-second course). Interesting trick, and maybe useful for a better driver than I am, but I won't be trying it again.

On stock pads.

I did have this on one run during the autocross (did 2 events with the full off mode). I thought maybe I was too hard the ABS hit back hard (caused me to have to use my sidewalls as a brake in the decreasing radius I was entering). I need more seat time with these DS2500s to figure this out for sure.

It didn't rotate much but that was after I mistakenly put too big of a FSB on the car so a lack of rotation was a problem already

Make sure the temp gauge (engine coolant temp) is at the "normal" position where it would be after driving the car for 15 minutes or so. Once it's there, turn the engine off, turn it back on, and then do the pedal dance, and it'll work. If the engine isn't at full operating temperature, it wont work.

How would one do this at a track event? Between sessions the engine will cool down and prevent you from doing this before a sessions begins.

It works fine as long as the car hasn't been sitting for over 3-4 hours. If you can't get the car to go into diagnostic mode that means you SHOULD NOT be on track, car should be at least partially warmed up to where the coolant gauge is over the minimum mark before any hard driving.

Idle for 5-10 minutes to warm the car up. Should be doing that before a track session anyway

Let it idle for a bit before your session.

You should be warming up the entire car before driving hard, as previously mentioned...
