I've come to understand the underlying reasons manufacturers say to take it easy are because:
1: Everything on the car is "breaking in" from the piston rings, bearings, seals, gears, clutch, electronics and contacts, etc. If something were to go wrong in the first few hundred miles, well, you're driving easy and somewhat less likely to result in an accident.
2: YOU are probably new to the car, so the "break in" is also for driver familiarity. This is where "easy on the brakes" likely comes from, aggressive braking goes hand in hand with aggressive driving. Take your time driving gently to get to know it before tearing off like a hooligan.
3: Lawyers. Probably the reason for the unspoken #1 and #2.

During break in- I also subscribe to the idea of driving it normally during break in, vary engine load and rpm frequently especially in the early miles. Brakes will be used normally from day one, once I'm positive they function properly. Overall, nothing too aggressive, but let the mechanical nature of the car come to be used somewhat before you go hammer on it.

Normal daily use- I also begin moving within 10-15 seconds after startup. Warm up times are shortened by driving gently at low rpm until the temp gauge starts to rise. Then drive normally. Nothing aggressive until temps are nominal and tires are warm.

I've had two STi's and an Evo that were treated per above, and they all ran superbly and never consumed any measurable amount of oil.

All other Toyota owner's manuals tell you to warm the engine by driving the vehicle, but not racing the engine. This is for all the same reasons RyleyMA61 mentioned for rebuilt engines (which I also do with new vehicle engines).

i used to let my SW20 warm up for 15 minutes till the oil got to 60 degrees before moving..

my neighbors loved it. DAT LUMPY IDLE

My neighbor dobbed me in to EPA for doing that.

Got a warning letter, so I put my standard exhaust back on. Didn't want the hassles of getting a fine or having to get the car tested at Rta cause I'm pretty sure it would not pass for multiple and multiple reasons

my first MR2 got reported to the EPA (actually called DECC)
popped the standard one on and never had a trouble again.. (sounded like a touring car)
