I just used a generic allen key and went about 3/4 of a turn. Car does feel plusher now.
When you get to the end - full soft or full hard - is there a definitive stop? I wouldn't want to accidentally exceed some threshold and possibly cause damage

Yes, there's a point where it's very obvious that you've reached the end. Just go slow with the turns and you'll know when you've reached the limit.
