I was able to replicate this consistently earlier today (on snow/ice).
With the long 5 sec button press, I was doing 180 and donuts in a parking. The slip indicator light was never coming on no matter the amount of slip angle or wheel spin or complete 180 spin UNLESS I touched the brake. Every time I touched the brake the slip light flashed and the ABS kicked in. The reason for the ABS was probably because I was on snow/ice, but the light was not flashing if I was engaging ABS in straight line, only if I was drifting/sliding AND braking.
I didn't seem to noticed any nannies except the ABS, but the brake pedal was higher/harder than normal ABS, so maybe that was ice mode (especially since it was icy...).

It also happens when a drive wheel leaves the ground.

It's hard to say, as I was not going really fast and the ABS was kicking in because of the slippery surface. It seems there was no intervention except the ABS. But the brake pedal seemed firmer and higher than normal, so maybe ice mode.
