So if we total our car, the insurance companies will not give us what we paid for all our "undeclared" modifications since they now own them somehow.
They don't replace those parts in an accident that doesn't end up as a totalled car either. How is swapping back in the stock parts not in order here and not readily accepted?

I think you will find that most insurance companies will indeed let you swap back. As long as you didn't sell off all the stock parts.

They don't like doing that....even with meticulous receipts. My last car I had JUST done a timing belt and water pump and major mechanical service and they said something to the effect of "well that's just normal operating costs and you should do that to keep your car running."

Insurance sucks when you're trying to get a fair deal and they're totalling out your vehicle.
