Aluminum = soft
Steel = not soft. Many transmissions have aluminum shift forks riding in a steel collar. I've seen inside enough transmissions to know that premature wear of shift forks is a very real thing.

I've been resting my hand on the shifter on all my cars for years and have issues.

The shift fork/collar mechanism is designed for brief application of force, not constant contact. Leaving one's hand resting on the gearshift is abuse, plain & simple. Whether or not one cares that shifting issues will arise after 100K miles is a personal choice.
Understanding the design of any system and making an informed decision about what to do with that knowledge is a win in all cases.

...which stands to reason, why dont they simply beef it up enough to allow the constant force? so people can have the option to rest the hand there or not?

Beefier systems do hold up better to abuse but that doesn't change the fact that it's abuse nonetheless.
