I think that's normal. How few is a few seconds? My car does that like every 20 seconds or so I think

Probably the compressor. When below freezing and set to defrost the compressor kicks in and out a lot! Like somebody said before it is probably so it drains and doesn't freeze up.
I am actually amazed at how fast these car's windshields will frost over if you do not have the defrost blowing. Literally 30 seconds without it and you can barely see.

You actually want air conditioning when defrosting/defogging. The humidity in non air conditioned air will often fog the windshield if the A/C isn't running to "condition" the air. That is why the A/C automatically turns on when you switch over to defrost.

Somewhat-ghetto stealth installed my Escort SmartCord in the blank next to the rheostat. Works great after figuring out how to wire it all.
