Anyone know of a good way/place to mount a 500gb slim hard drive behind the HU? Or, better yet, somewhere that I can access a bit more easily in case I want to add/remove stuff to and from the HDD. Maybe behind the glovebox?

What i would do is just velcro it in the glove box. I'd probably recommend using an SSD over a regular spinning drive also.
