If you haven't changed a lot of wheels, it's a good idea to use them.

If you've swapped wheels on several different cars, and are confident in your star pattern and proper sequence of hand tightening a little at a time to get the rim to center and then a little more, and then a little more and then tighter and tighter following that star pattern, then you don't technically need them, as the lugs will center the rim when done properly. If you haven't done it before, grab the rings since they're cheap insurance. But get metal ones.

Why the metal ones ? don't the plastic ones do the same thing?

I heard that the metal ones can warp too

Depends on how hard you plan on braking. If you track at all, you'll probably melt the plastic ones and they get stuck in the rim or on the hub. It's true metal ones can warp, but after they're on, their job is done. The lugs are what create the mechanical connection between the hub and the wheel. The rings just help you get the rim centered on the hub until you get the lugs hand tightened.
