Very hard to get pure speed density to run right on a straight ITB setup. You can set up a blend between alpha-n and speed density, but that would still require a lot of firmware work. Much easier to just run an EMS like a Hydra or a Motec for this kind of application and then you can just switch to a straight cable linkage to get the fastest, most accurate response.

It is theoretically possible to route the MAF to one single ITB, but that would look very weird and if you popped the hood in front of agent Jay from MIB he would probably say something to the effect of: "And, uh, oh - hire a decorator to come in here quick, 'cause... DAMN."
