Can you elaborate? The whole tuning aspect is new to me and I'm not sure of the benefits besides the elimination of the torque dip...And how pricey was it

Sure. I believe that tuning is an overlooked aspect in many cases. Most people will go for bolt-on mods first and expect major power gains, but the truth is that the stock ecu can only adapt so much, and eventually outside tweaking will be required to realize the full potential of those mods. The way I looked at it, I might as well start with the tune, and honestly, it's the best hp/$ mod (aside from FI), even for a bone stock car. Flashing your ecu opens up the potential to monitor all engine systems as well, if you're interested in that sort of thing. Also, some tuners are able to improve critical parameters and prevent potential issues (DI seal failures, for example), so you don't have to wait until manufacturer comes up with the fix.

Now, there are risks involved, such as voiding your warranty, and getting a potentially bad tune (*cough* Mr. V *cough*). However, the benefits outweighed the risks for me.

Just to give you an idea of my experience: I've been running the fa20club e85 tune since March (over 10k miles), with multiple autox events and a track day, with no issues. I paid $500 for the tune and license and borrowed a cable from a local fr-s owner, but I've recently purchased my own cable for $300. I've been working with fa20club guys since the beginning, sending logs and receiving updated tunes, with noticeable improvements every time. Car definitely feels more powerful (no dyno #'s, sorry); throttle response improved, better pick-up in the torque dip region, 8k rpm redline, racerom features are neat, etc.

New high pressure fuel pump. Crickets are gone, and so is a great deal of the clattering of the engine. It sounds less like an early 80s VW rabbit diesel now. It still clatters, but not like it did before the new pump.

So hard to pick just one. Each mod adds SO much to the car. Sharkfin Antenna, Reverse Camera, new wheels, suspension, WeatherTech Mats......geez. I guess if I had to choose one thing to keep out of everything it would probably be my WeatherTech Mats. When I'm driving I don't really notice my exhaust tips, antenna, reverse camera, suspension, wheels, etc. What I DO notice is if my carpet is dirty. I'm anal about that stuff.
