Crazy noise is subjective (and can simply be tuned around if you're speaking of VVT noise), and fuel efficiency doesn't matter when 1) you're making noticeably more power 2) E85 is far cheaper than premium

But it's OK, we all have our opinions of what something is worth. Back in the early days of these cars a tune was all but required if you didn't want to have DI injector seal failures...

That's ignoring the other drivability improvements. Not to mention E85 on a stock header has quite a gain as well.

MAF scaling is the simplest part of the tuning and you SHOULD be checking it even with a completely stock setup. That's the whole point of the open tunes.
