Best Body Shop in San Jose area?

Some idiot merged into me during my commute yesterday morning. She admitted fault and the claim is in the middle of being processed, and adjuster coming out to inspect my car either today or tomorrow. The actual damage is on the passenger side door, fender/qtr panel, and front wheel (after market). If it helps, I can post a picture.

I could use some help/tips to make this a better process:

Should I go through my insurance or just let her insurance handle it? So far I have reported it with my insurance, but not filed it just yet. I have filed through with her insurance and that is where we have a claim already in place.

Both seem okay. This is the part that I could use help with. I don't want just any shop working on my car and not thoroughly inspecting everything. I am hoping for the car to have the side door replaced, fender/qtr panel replaced, wheel replaced, everything paint matched, frame parts inspected, alignment, and anything else that could be affected. I don't want to go to a place that is just going to replace door, fender/qtr panel, wheel, and do shitty paint match.

Any info in regards to diminishing value would also be greatly appreciated. More towards how to "collect" this. Basically, I don't want to walk away with just a worse condition car that may or may not look like nothing ever happened.

Any input is greatly appreciated. Drive safe brothers and sisters.
