If I get a grey FR-S, will white wheels look good on it or will it look ricer?

get BBS wheels. White Wheels will look good on whiteout . but grey... nah u should go with Black rims. show us a pic of ur grey car so we can give u opinions

Wheels -> Either Color will work, depends a bit if you want to play with specific colors of if you just dont care and take what you like. If you go for white, just remember that cleaning them will be alot harder than black. If you use it as a daily driver, white may not be the easiest color to keep clean.

Wing -> In my opinion a white wing on a non white car looks super ricer. The wing should fit in with the car lines/color, but if it is white it screems "look at me, I've got a rear wing". Its a different thing if you put a black wing on a white car, as it will "hide" it a bit. But a white wing on a dark color car is just like puting a neon sign up there :-)

I like the look. Just be aware that white wheels are notoriously difficult to keep clean.
