OFT Tunes and Dealers
Im just wondering if Off-the-shelf OFT tunes are detectable by dealers even after I flash on the stock tune. Will they be able to see that I messed with the ECU?

There is no evidence supporting the dealer being able to see any flashing has occurred, if you flash back to stock tune.
Even if you don't flash back to stock, a tune isn't something they go looking for unless you're there with a problem.

There ARE ways/means to check if it has been flashed. But from what many say, average dealerships don't have skills/knowledge/tools (or eagerness?) to find it out, so most probably flashing back stock tune prior visit is safe for 99.99%.

but if you flash it back to stock and have a check engine light by the time you get there, getting a different code than the one that landed you to the dealership, aren't they going to suspect something?

The short answer is no...
