Well, not sure about the faked baked ones you found (ughhh...) but real potato chips in a sealed bag don't really go bad, at least according to a higher up I know that worked at Frito Lay (husband of the HR director at my last job). She used to bring them to work by the boxful because the employees take them home when returned by the route dudes.

As others have mentioned, it's more about everyone expecting a date on everything, so they put a date on them based on the average time the product sits on the shelf.

I've had some that were as much as two months past the "best by" date and the tasted fine.

A lot of processed or preserved food lasts much longer than us "modern folks" are willing to accept.
