I've been going through the opposite. I am big into open world games. Fallout and Borderlands are my favorites. My wife recently got back into gaming after about eight years of not playing.At first we played Diablo 3 since couch co op is not split screen. We bought a second Xbox to play games together in the beginning it was Halo Master Chief Collection and now we are playing Borderlands 2. She is enjoying it but is just playing though it like Halo. She'll often ask why are we doing this or that. Difference in someone that mostly played RPG games than straight FPS I guess. All in all playing games together is fun we are barely at the point where we have to save Roland so still in the way beginning. I wish my PC character could sync over.

I just played through and beat Witcher 3 with all expansions. Didn't do EVERY mission, but I did do most in my 115 hours of play. Definitely a clever game. Glad I bought it. However, Fallout 4 and the Fallout series in general are just much more engrossing.
Also, a couple days ago, I loaded up Wasteland and started to play. Man, I could have played for hours. Right now, I'm eyeing the Shadowrun RPG series. I played console versions long ago. I'm temped to play, but got shit to do. Witcher 3 already hurt my sleep schedule badly.

Have you had a look at Just Cause 3?
The JC3 world isn't as interesting as Fallout or Borderlands and the missions are all very similar but there are no loading screens when transversing the massive world. (There are loading screens when starting and ending a mission.) As an open world it is quite an achievement. I have seen a paramedic giving cpr at a random intersection. I find it a fun game. 238 hours and counting.

Heads up- in Assetto Corsa you can now create custom championships. So if you want to do a GT86 cup you can do it right through the game. There aren't many tracks in AC but I made a 6 round championship
