You're not missing anything. You are quite right if it is indeed true that the calipers are the same distance from the hub.

Yes, you are correct. That is called the disc's 'effective radius.' If all four of the RR kits have the same effective radius and piston bores, then the torque output is the same on all four kits.

That begs the question though, why would you want extra unswept disc area outside/above of the pads on some of the kits, but not on the others?

Standard parts /I suspect. Ones a standard STI Brembo disc, the other a Colman Racing disc ring.

Construction, materials, finish, tolerances, the list goes on and on. The problem is, it also costs more.

It's the same way a Ferrari 488 is more car than a BMW M4, which is more car than a 370Z.
