That didn't occur to me because I don't think I've ever owned a car that had a button on it. Trucks/SUV/Vans yes, never a car.

I've only owned older cars so I kinda thought they would have implemented it by now

Cost cutting. Subaru owners enjoy a few creature comforts the FR-S simply didn't get on its menu. It probably wouldn't be too complicated to put one on an FR-S using BRZ parts, or swapping trunk lids. The connections for the wiring is probably all there, just going unused.

There is no keyless entry on the FRS so no there is no button (other than on the fob). You only can have a button with keyless since it needs to send the signal to allow the button to work.

But you could have it operate like a third door. Locked when the car is locked, unlocked (but latched) when the car is unlocked

So it's not just another dumb button like the dash button, only mounted outside?

Yep seen it on hatches just not on cars with a trunk. Not saying I don't believe they exist just that I have never seen it. I would not like that because I don't mind leaving my car unlocked but want the trunk locked unless I am actually going in.

What situation are you finding yourself loading/unloading and having the car lock on you?

That's the exact situation, if I unlock it for someone without giving the keys in the garage
