They're there as safety precautions. Maybe they should get rid of airbags and seat belts too... those are only for bad drivers.

At the end of the day there are still going to be drivers who can't drive up a hill well, heel-toe well, or drive well, period. For the rest of us, shut up and enjoy your assist-less car.

Before you release the brake, release the clutch just a little. It will give a little bite which will allow you to switch from brake to throttle.

When I do this I try to tap the throttle because too much will cause wheel spin...
this is "dead nuts" accurate! alternate methodology: learn engagement point of clutch, and won't require e-brake.this is ONLY recommended IF you can do it quickly to move forward WITHOUT burning up the clutch.( no more than a second,or two) in other words,DON'T hold the car at the clutch engagement point if at all possible.

1.5k-2k on a hill is over revving? the clutch is also engaged for a little over 1 second..

Once you become comfortable with your car you will find the clutches "friction zone" its the point where the clutch is engaged and youre right on the verge of killing the car but you arent. If you use this itll eliminate you rolling back until you give it gas and take off. It also prevents you from burning up the clutch because you arent overrevving it. Use the handbrake method until youre good enough with your clutch to use this zone. Requires VERY small foot movements to find the perfect spot.

little off topic but doesnt the jeep have something that lets it do steep climbs without rolling back? like was it a locking rear diff?

Calling it the handbrake rather than emergency brake would be a good start.
I use the handbrake all the time but I can't recall ever using it in an emergency.

Just put in on, pick up the revs a bit and let the clutch out until the engine starts to load, let it off and pull away. It is daunting on a steep hill with someone up your clacker but use a few more revs so it wont stall.
