2017 Track mode on older model

Nope, it only changes TC and VSC settings. Steering feel and throttle response are constant.

As a side note to this, since it got me thinking, staggering pads the "wrong" way (more pad rear than front) actually improves braking distances on ice quite a bit. It has the added effect of getting the car sideways if you are braking while doing a light turn (vs plowing straight on with same pad, or front stagger), which I find better/safer but most people would find "undrivable" or "dangerous".

On track I can maybe understand but the main thing I get from the threads is that it stops the TCS turning back on if the car leaves the ground and disables EBD. Neither of these are necessary on the road so the button hold should be enough IMO.

Certain track guys prefer that the brake system did not intervene for them to keep the car pointed straight. By and large EBD does that by making sure that wheels with weight transferred off of them aren't braked as hard.
