welcome to subaru. Every subie i've been in has had this issue. the paint just sucks on the interior trim.
On my 05 STi, I scratched the dash panel when wiping off dust |

Also have scuff marks on the lower part of the door from my shoes, but eh. Those marks come off easily enough with a quick wipe down. Haven't noticed anything else getting scratched/scuffed on the interior

There's got to be an interior trim 'refresher' available that doesn't give the plastic the glossy look.

Need links please, i hate these scoff marks they dont easily wipe off. I feel like some of these are plastic scraches that removed paint so its just a white mark

Good news is the parts are relatively inexpensive to replace. For example, the center console is only $52. Obviously, you don't want to have to spend that, but should you ever need to, you have the option!

What is the best tool for removing interior trim around the limiteds radio and other interior trim pieces without scratching them? Any particular brand that works best?

I don't have a link unfortunately, that's the price I was quoted at the dealership parts counter.
And I only have the part for the center console with seat heater switch cutouts (BRZ Limited): 92113CA130
