Do the normal prep (clean, remove the membrane, etc) Apply your favorite rub Wrap them in Aluminum foil meat side up. Put a little liquid in the foil. I usually use bourbon or beer but you can use apple juice or vinegar or even butter. Wrap the ribs tight. Cook them meat side up for 2 to 2.5 hours at 275 degrees Unwrap the ribs, and return to grill. Brush on BBQ sauce or a glaze. Cook for 15 to 30 minutes depending on the crust you want. You won't have the smoke, so you could apply a little liquid smoke during the foil process.
