I use "Tipo" flour also known as "00" which is super fine. Recipe on the instant yeast packet specifies 2 cups flour. In a mixing bowl put in1 cup flour, yeast, 3/4 tsp salt, 3 tbsp olive oil and 3/4 cup hot tap water. Mix with big spoon and slowly add in 2nd cup of flour. Put sticky dough ball on surface dusted with flour (I use regular all purpose). Knead for approx 4 minutes then use roller or hand form for pizza.

My oven bake temp max is 550F. It takes 10 min for a thin pie and I like it well done. The dough is hand formed on a non-stick perforated pizza pan.

PS Can't replicate a New Haven CT pie at home without an 850F bottom heating oven.
