So, my new filter came from Germany. I wanted my twin to know superior engineering.

Got out the last remaining bottles of the best booze I ever made with my still 25 years ago. That year, I got a few hundred pound of Napa valley cabernet , merlot, and pinot noir grapes I made into 20 gallons of wine. Distilled 6 times with my copper pot still to 180 proof.

The first one was diluted to 80 proof, and aged for one year in a light chard oak barrel.

The second was diluted to 120 proof and aged same as first.

The third was diluted to 140 proof and aged in a used champagne oak barrel, that held port, for four years.

All different, all absolutely delicious. #3 is incredible. Time to drink.

Cool mushrooms growing on my yard. I think they’re Hen of the Woods? Giant Polypore?

Remember the heavy filtering (HF) will not do! We must have the high flow (hf) model. Please do not confuse the two or you will be losing out on power gains.

Tried some of my 110 proof in roasted American Oak for 2yrs. Not bad but time is needed. The Limoncello I make With 190 proof is worth dying for.

I have had a few special bottles of wine or spirits sitting in the cupboard at various stages.
Rationally I know they're there to be drunk. There is no point the bottles just sitting there.
I also know if I drink them they will no longer be there, they will be gone for good.
Admittedly, I've never regretted opening a bottle.
It is a wonderful dilemma to have.
