Here in Ontario, small varmints yes! But birds and animals that require a license which are taken out of season will necessitate a review and permit to keep them. Protected species are even worse. I have a friend who is a birder/photographer and he found a dead Saw-whet owl. He had to jump through a number of hoops to get to keep and have it stuffed.

One time in Nor Cal in the hills, I came around a corner and a flock of turkeys was crossing. I hit a hen, and before I could stop and go back to get it,someone going the other way stopped and grabbed it.
