Masa is a corn dough or flour that has been soaked and cooked in an alkaline solution in the nixtamalization process. It is used for making corn tortillas, tamales, pupusas, and many other Latin American dishes

Then I had to look up what "nixtamalization" was.

"Nixtamalization is a process for the preparation of maize, or other grain, in which the corn is soaked and cooked in an alkaline solution, usually limewater, washed, and then hulled. "

I think that some dude just made up the word Nixtamalization to mess with people since the could have just said "soaked and cooked". Probably the same guy that started using "fitment" as both a noun and a verb.

Nixtamal is an Aztec word to describe corn that has been partially cooked and soaked with calcium hydroxide, otherwise referred to as cal or lime.

The specific process is way older than the English language. It's like complaining about the made-up word, fermentation, or homogenization.

Yes. And most of the words ever made up through history are no longer in use. So they need to resurrect a long silly sounding term for "cooked a certain way" just because it is taco flour. Did the Aztecs even eat tacos?
