I made a t-bone steak for me and the wife. I browned it for about 30 seconds a side in a cast iron skillet with half bacon grease, and half clarified butter. Then I put it in a 350° oven for 5 minutes a side, and then let it rest for 5 minutes. Served it with perfectly steamed broccoli and sour dough bread and butter. oh yea, and horseradish. I guess I should have taken the picture sooner.
