I wouldn't do it. You never know if they (dealerhship) will do it right and if they didn't it might start to rust. However the factory build the car is best leave it along.

I thought the BRZ already had an undercoating? At least I have some sort of undercoating on mine that is body color.

Done right it can be beneficial on a car driven year round in snow country where they use a lot of salt on the roads. Unfortunately it is often not done right, and if done improperly can do more harm than good. I always decline all paint protection/interior protection/undercoating sales pitches when buying a car.
