Sims really just give you a feel for the turns and maybe the "ideal" line but not necessarily the line that works for you or your car. I've always found tracks with a lot of elevation changes to be hard to replicate in a sim, like you said, something about the g's/seat of the pants sensation. Also, depending on your rig, you can't really get the sensations of your inputs ie steering, brakes, etc.
