To @Tcoat , I'm worried about your diet, here is a healthy meat free(sorry) alternative;




Mixed Bean Chilli with Mozzarella




Spice up your family meal with this warming tasty bean chilli!
Ingredients

  • 1 - onion, chopped
  • 1 tbsp - olive oil
  • 1 - clove of garlic, crushed
  • 1 - red capsicum, roughly chopped
  • 1 tsp - mild chilli powder
  • 1 - red chilli, optional, finely sliced
  • 1 - can of diced tomatoes
  • 1 - handful of torn basil leaves
  • 1 - can of mixed beans
  • 1 - ball of buffalo mozzarella
  • 1 - pinch of salt and pepper
Method

1. Heat the oil in a large saucepan and add the chopped onion and garlic, cook for 4 minutes
until softened. Add the capsicum and chilli powder, stir and continue cooking for a further 3
minutes.
2. Empty the can of beans into a sieve and rinse under water, add the beans to the pan and stir.
3. Add the can of tomatoes and torn basil leaves (leave some fresh to garnish) and sliced fresh
chilli, reduce heat and allow to simmer for 8-10 minutes. Season with a pinch of salt and
pepper.
4. Serve in bowls and top with the torn fresh mozzarella and fresh basil.

Sounds good. With 2 pounds of medium ground beef added.
