I'm currently still running base level BC coils that I installed early on when the car was still an experiment that I wasn't sure would pan out. Now that I'm fully down the rabbit hole I'm reconsidering the suspension but I'd like to understand why the upgrade works so much better.

It allows for better control of the load transfer (weight transfer) of the car, and allows for the tires to stay in contact with the surface better (contact patch), and longer (no lifting wheels).

Basically, yes, this is a very important part of it. Keeping the force between the tire and road as consistent as possible and avoiding sudden sharp load increases is a key part of getting maximum grip out of a tire.
