Not entirely true, its much leaner, and more expensive. However I do like the taste. In general, I will choose a "game" meat over beef if there is an option.

To Zaku's point, the overcharge for bison meat is ridiculous.

I stand corrected!
I didn't think the difference was so massive.

More protein per pound too if I remember correctly. Important for those who watch their diet macros closely

Speaking of game meat, I made sausage balls this weekend from some wild boar sausage given to me by a friend/coworker who killed the 400lb boar in a knife hunt.

Some of the best sausage I've ever had.

I got ground bison for $10.99/lb yesterday. not that bad imo. Hell some Boar's Head deli meats can cost more.
while I don't think I can do any better I'm going to check with one of my vendors to see if I can get a better deal through my restaurant.

it's SOOOOO good! super lean, loaded with protein and DELICIOUS! currently I'm putting on (good)size for a body building show in October. good lean meat is hard to come by. there's only so many ways you can make chicken before you get sick of it.

I agree with Tcoat, there is something else going on there and as long as you don't know exactly what that is, you should answer their questions and comment as little as possible.

Going blindfolded into meetings and being cornered into "testifying" about stuff without knowing all the angles is very hazardous. I believe I've saved my career multiple times by keeping answers short and straight in those situations.

Yes, it's what it sounds like. You go out in the woods with a knife, hunt down the boar, and kill it with a knife, face-to-face.

Think of it hunting Assassin's Creed style if you've ever played that.

Pfff, knife? Why not just whack it with a rock, wrestle it down and break it's neck with you bare hands, like a real Cro-Magnon?
